Spice up spring!

Posted by

Spring is definitely in the air, with summer just around the corner too. We love this time of year when BBQs can be an everyday meal.

To kickstart the season, we have put together a spicy hot chicken marinade you can impress guests with at your next get together.

1 teaspoon smokey paprika

2 tablespoons hot chili powder (or more if you can take it)

2 teaspoons olive oil

3 cloves garlic, minced

1 cup fresh lemon juice and zest

thumbsize piece fresh ginger, chopped

1/2 teaspoon salt

4 bone-in chicken breast halves, also works well with drumsticks or thighs

Remove skin from chicken breasts and cut into smaller chunks. Put into large bowl and rub with some olive oil. Then, add in paprika, chilli powder, lemon juice and zest, garlic, ginger and salt and cover chicken completely.

Marinate overnight if possible or for at least 3 hours in the fridge.

Remove from fridge 30 minutes prior to cooking. Preheat medium grill or BBQ. Cook on medium for 30 minutes turning every few minutes, until juices run clear.

Spicy hot chicken is delicious in wraps, with salads, pasta and cous cous.

Order your chicken online from Watos or visit the Long Jetty store.
